






Fuegos de Apalta
Fuegos de Apalta, opened in 2017 by acclaimed Argentine chef Francis Mallmann, is located behind Montes Winery amid the vineyards of Colchagua, Chile. Enclosed by glass, the dining room provides panoramic views of the vines and surrounding Apalta hills, blending contemporary design with the natural setting.
Mallmann, recognized internationally for his Patagonian open-fire cooking, brings his distinctive techniques to Chile. The central open-fire pit is a focal point, where premium cuts like ribeye, New York strip, and Tomahawk steak, along with fresh local fish and seasonal vegetables, are grilled over wood embers. Each dish is expertly prepared to highlight the flavors of the region and Mallmann’s culinary roots.
Guests can enjoy meals paired with Montes’ acclaimed wines, making the restaurant a connection point between South American cuisine and Colchagua’s winemaking tradition.
Advance reservations are strongly recommended, especially during the high season from November through March, when tables should be booked at least three weeks in advance due to limited seating.
